I’m starting to forget how long it has been since we have all been in quarantine. Since I’m banned from buying non-essential items at stores here in Michigan, I’ve been spending a lot of time cooking with the ingredients that I have left in my pantry.
I found a 3-ingredient Lorna Doone shortbread cookie recipe and it is absolutely delicious!
1 cup unsalted butter, softened
1/2 cup sugar
2 cups all-purpose flour
Preheat oven to 325°. Cream butter and sugar until light and fluffy. Gradually beat in flour. Press dough into an ungreased 9-in. square baking pan. Prick with a fork. Bake until light brown, 30-35 minutes. Cut into squares while warm.
